A lot of stuff depends on the author.
Random stuff that comes to mind:
In the Laurel K. Hamilton's Anita Blake books have a lot of interesting quirks and I'd point you to wikipedia to look through their things. All the "marks" and Human Servants and things.
One thing I like about the vamps in that is that holy water, bibles, and crosses work but only if the person using it believes in the Lord.
Some people (like the Buffy Vamps) can eat human-food (though usually taste is diminished / not really there at all) though in others (like Christopher Moore's Jody from Bloodcuking Fiends and the new You Suck) has that even a little makes them throw up.) More often than not vamps miss peoplefood.
Several series have that a vampire needs to be invited inside a place by its owner (and can be later uninvited). Notably Buffy and Laurel K. off the top of my head though Im sure theres others.
Usually vampires don't need to breathe (though a lot are said to do it out of habit) and or their hearts dont beat.
Whaaat else.
Fire and sunlight kill.
In some series (like Laurel K's and Anne Rice's), daylight puts vamps out to sleep indefinately and are, well, dead to the world, haha, until nightfall. Others, like Buffy, can have them up whenever they feel like it (though sunlight is still lethal so they stay inside. Also in Angel, I remember the windows in Wolfram and Hart had something or other done to them so the vampires wouldnt sizzle.)
